it's faux-ito time!

with the station fire still burning, th icky hot heat and the air quality as poor as it is, i am a cooped up lobster-girl. yesterday i thought it would be a good idea to purge my fabric stash and found myself amidst some mad quirky printed chaos. it was hot i was sticky and icky and it was hot, hot, hot. i stood up to survey the chaos and as sweat ran down my legs i thought, i need a break and since it was only 11am, i couldn't whip up an official mojito so i went with the next best thing, a faux-ito.

thirsty? all you need is:
*1 cup sugar
*2 cups water
*happy bunch of mint
*lime juice
*fizz water

grab yourself a cup of sugar, a bunch of fresh mint and two cups of water. dump it all into a small saucepan and cook on low heat for about twenty minutes. make sure to stir a little here and there and keep an eye on it so it doesn't burn or boil. this is your simple syrup. when cool, drain out your mint leaves and pour the sweet goodness into a glass measuring cup, container or jar. add a fresh sprig of mint and admire. this will keep in the fridge for a prepare your drink, fill your vessel of choice with ice, 2 tablespoons of your syrup (more if you have a sweet tooth) and a squeeze of fresh lime or if you're not in a lime friendly climate, feel free to use a bit of juice from that green plastic lime you keep in the door of your fridge. lemon juice would work too but lime is sooo much better. top it off with some fizz water add a sprig of mint for garnish give it a swirl and plop yourself down somewhere comfy to enjoy. if it is a bit later in the day (at least after noon) feel free to add a shot or two of rum and make it official.
