or quite possibly "Too Late for Pancake Week" depending on which calendar you look at...Puff pancakes, popovers or dutch babies, however you call these they are just dandy! Here's my take on a classic recipe:
What you need:
1/2 c flour
1/2 cup milk (or your fave substitute)
a wee bit o' butter, slated is yummier
cinnamon and/or ginger
small muffin pan (or whatever you got, you can do this in a pie pan even)
What you do:
Toss your empty pan into a warm oven (425 f) and let sit. Mix up eggs, flour & milk. If you are brave, add a half teaspoon of baking powder (this will add to your pancakes puffiness). Mix in a little spice if ya like, maybe a we bit o' sweetness like some vanilla or sugar, but not necessary. Set aside.
Using a nifty fun oven mitt, pull out your now hot empty pan. Add a dollop of butter to each cup and marvel as it melts. Add a dash of cinnamon and/or ginger then scoop about 1/4 cup of the mixture into each muffin cubbie. Bake at 425 for about 15 minutes. If you added baking powder don't peek or else you will feel like you are in that episode of I Love Lucy where the bread just keeps rising and rising. It will all deflate once you take it out of the oven but man, can these tiny pancakes puff up!
Plop out onto a pretty serving dish and sprinkle with fresh squeezed lemon juice and a pinch of sugar. Add some black pepper to experience it "jek style". These babies are so good, soooo many ways.
